Lemon Shoofly Pie
From Wanda E. Brunstetter’s Amish Friends Cookbook, Volume 1
Ingredients
- Ingredients for Crumbs:
1 1/2 cup flour
1 pound white sugar
1/4 teaspoon shortening or butter, softened
1/8 teaspoon baking soda
- Ingredients for Filling:
2 egg
Zest of 2 lemons
1 pint Juice of 2 lemons, strained
2/3 cup flour
1/8-1/4 cup white sugar
1/2 cup molasses
3/4 cup boiling water
1 unbaked pie shell
Directions
- Preheat oven to 350 degrees.
- Combine all ingredients for the crumbs and work together like crumbs.
- Combine all the ingredients together and pour into an unbaked pie shell.
- Sprinkle crumbs evenly on top of filling.
- Bake for 45-60 minutes.
Amish Haystack
From Wanda E. Brunstetter's Amish Cooking Class Cookbook
Ingredients
1/2 pound saltine crackers or one bag corn chips, crushed
2 cups cooked white or brown rice
2 heads lettuce, chopped
6-8 tomatoes, chopped
1 (6 ounce) can black olives, sliced
2 cups diced tomatoes
2 cups diced onions
2 cups diced green pepper
2 cups diced celery (optional)
1 quart cooked navy or pinto beans
2 eggs, boiled and chopped up (optional)
2 cups chopped nuts (optional)
3 pounds ground beef, browned
1 (16 ounce) jar Ragu spaghetti sauce or salsa
2 cans cream of cheddar soup
1 (14 ounce) can condensed milk
Directions
- Put all ingredients into separate containers.
- Mix soup and milk together in a saucepan and heat.
- Add the Ragu sauce or salsa to brown ground beef and heat.
- Each person will serve up their own plate, laying the items in order given, making a “haystack.”
- Pour cheese sauce and your favorite salad dressing on the top and enjoy!

- Serves 12-14 people.
Stuffed Green Pepper Soup

Ingredients
1 1/2 cup green peppers, chopped
1 pound ground beef, browned
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons
Parmesan cheese
1 pint tomato juice
2/3 cup rice, cooked
1/8-1/4 cup cup brown sugar, or to taste
Directions
- Combine all the ingredients in a large saucepan and cook until the peppers are done.
Egg Roll Omelet

Ingredients
4 oz cream cheese
3/4 cup milk
2 tablespoons flour
1/4 teaspoon salt
12 eggs
2 cups chopped ham
2 tablespoons Honey Dijon mustard
2 1/4 cups cheddar cheese
1/2 small onion
Bacon
Directions
- Mix altogether and bake in jelly roll pan with parchment paper 15x10x1 for 30-35 minutes.
- Top with Honey Dijon mustard, cheddar cheese, ham, and onion.
- Roll up and top with more cheese, bacon, or ham.
- Heat until cheese is melted.
Garlic Potatoes

Ingredients
1 cup melted butter
3 teaspoons salt
1 teaspoon garlic powder (or real crushed garlic)
2 tablespoons minced or crushed parsley
1/2 teaspoon pepper
1/2 teaspoon paprika
4 quarts diced potatoes
Directions
- Mix seasonings with melted butter and pour over potatoes.
- Stir until potatoes are well covered.
- Must cover baking dish tightly with tin foil.
- Bake at 350 degrees for 1 1/2 hours.
Cashew Green Beans

Ingredients
1 gallon fresh green beans, washed and trimmed
1 cup butter
1 1/2 cup sliced cashews
1 cup honey
Directions
- Heat beans in water.
- Meanwhile, brown the butter.
- Once the butter is brown, add cashews and stir.
- Add honey last.
- Drain water from beans and add your cashew mixture.
- Stir well and serve.
Chocolate-Chip Cheese Ball
From Wanda E. Brunstetter’s Amish Friends Christmas Cookbook
Ingredients
1 (8 ounce) cream cheese
1/2 cup butter
1/4 teaspoon vanilla
3/4 cup powdered sugar
2 tablespoons brown sugar
1 (10 1/2 ounce) package mini chocolate chips
3/4 cup finely chopped nuts
Directions
- Beat cream cheese, butter, vanilla until fluffy in a mixing bowl.
- Gradually add sugars until combined.
- Stir in chips.
- Cover and refrigerate for1/2 hour.
- Place on large piece of plastic wrap and shape into a ball.
- Refrigerate at least one hour before serving.
- Roll ball in nuts.
- Serve with graham crackers.
Carrot Loaf

Ingredients
3 cups cooked and mashed carrots
1 onion, minced
1 cup celery, minced
1 teaspoon salt
2 eggs
1 cup milk
2 tablespoons butter
1 1/2 cup bread crumbs
Directions
- Sauté onion in butter and add to the mashed carrots.
- Beat eggs, add milk and bread crumbs.
- Mix with carrots, add celery and seasonings.
- Shape into a loaf and place in a greased loaf pan.
- Bake at 350 degrees for 40 minutes or until done.
